My friend Bruce and I started out ith a not-traditional Thanksgiving. The plan was to eat lunch with the folks at Holy Trinity Cathedral (they have an amazing pot-luck) and then, after a bit of a break, I was going to make eggplant parmigiana using the recipe presented in the video below. Bruce decided somwhere in there that he could not do an entirely non-traditional feast (even though it was the second one in the day…) and so he made Turkey following the recipe for coq au vin, aka Turk au Vin. And for the two of us… he made three pounds of mashed potatoes. Really. Not pictured here a dessert of chocolate cake with cherries.
